First, make a sweet and sour sauce.👉: One spoonful of cooking wine➕Two spoonfuls of soy sauce➕a spoonful of old smoke➕three spoonfuls balsamic vinegar

🍀🍀Practice: 1⃣Wash the spareribs, add ginger slices, scallion and cooking wine in the pan with cold water, blanch the spareribs for 3 minutes, drain the water with blanched water, heat the oil in the pan, stir-fry the spareribs slightly yellow, and stir-fry the spareribs with a small handful of crystal sugar on low fire to make the jujube red, (note⚠Be sure to make a small fire and stir it instantaneously with a shovel, otherwise the fire will turn black and bitter if it gets bigger).

2.⃣Pour in the spareribs, stir-fry them quickly, pour in the mixed sugar and vinegar sauce, stir-fry them evenly and color them evenly, add a few slices of scallion and ginger, anise and germ them with boiling water, simmer for about 40 minutes over medium and small fire, and finally collect the juice over high fire (don't collect them too dry) and sprinkle some white sesame out of the pan.
